Chilli-tomato jam


  • Toast the mustard seeds in a dry pan. Then grind with a mortar and pestle.
  • Put the ground seeds with the remaining ingredients into a heavy-bottomed pot. Stir well and gently cook until thick and fragrant.


  • ½ tbsp yellow mustard seeds
  • 2 cans diced tomatoes
  • 35 gm grated fresh ginger
  • 60 gm caster sugar
  • 75 ml red wine vinegar
  • 1 heaped tbsp chilli paste
  • 2 tbsp Asian fish sauce
  • 3 large garlic cloves, crushed
