Grated potato, thyme & gruyere gratin


  • Preheat oven to 180°C fan forced (200°C normal).
  • Whisk both creams together until smooth in a large bowl.
  • Add the beaten eggs with the grated potatoes, cheeses, cayenne, salt and thyme. Mix well using a wooden spoon and then transfer to a gratin dish (or casserole). Cook in the oven for about 45-55 mins until the top is golden brown.
  • Serve as an accompaniment to a simple dish.

  • 150 ml light cream
  • 125 gm sour cream
  • 3 eggs, lightly beaten
  • 750 gm floury potatoes, peeled & grated
  • 125 gm mixture of freshly grated gruyere & parmesan
  • ¼ tspn cayenne
  • a pinch of sea salt
  • leaves from 3-4 fresh thyme sprigs
