Microwave pear pud

Method

  • Put the flour, brown sugar, 100 gm softened butter and the eggs in a bowl. Beat for a few minutes with an electric hand beater until light and fluffy.
  • Add the sultanas, cinnamon and pears. Gently mix with a wooden spoon and spatula.
  • Then transfer the mixture into a large, lightly buttered microwave-proof dish, spreading out evenly. Cook in the microwave on high for about 10 mins until light and puffy
  • When ready, remove and set aside for a few minutes, before dusting with icing sugar.

  • 100 gm self-raising flour

  • 100+ gm unsalted butter
  • 2 eggs
  • a handful of sultanas
  • 3 tspn ground cinnamon
  • 2 x 400 gm cans pears in syrup, drained & roughly chopped
  • icing sugar
