Jam bikkies


  • Preheat oven to 170°C fan forced (190°C normal).
  • Put 200 gm flour with the sugar and butter in a bowl and rub together with your fingers until the mixture resembles breadcrumbs.
  • Add the beaten egg and stir with a wooden spoon and then with your hands until a soft dough is formed.
  • Roll out the dough on a lightly floured workbench to about 2 cm thickness and then cut into rounds.
  • Lightly oil 1-2 baking trays and line with baking paper.
  • Then place pastry rounds on top, leaving space in between, and make an indent in each one with a teaspoon. Place a small dollop of jam in the hollows and cook in the oven for about 10-15 mins until golden. Remove and cool on a rack before serving.
