Cheese, ham & green tomato pickle pasties


  • Preheat oven to 180°C fan forced (200°C normal).
  • Heat a little oil in a heavy-bottomed pan and gently sauté the onions and thyme until golden, stirring now and again.
  • Turn off the heat and add the ham, grated cheese, 2 tbsp pickles and a little ground pepper. Stir well and taste for seasoning.
  • Mix together the egg and milk.
  • Then cut out large pastry rounds and brush the edges with egg wash.
  • Put some mixture along the centre of the pastry rounds and bring up the pastry. Seal and crimp the edges. Then brush all over with egg wash and cook in the oven for about 20 mins until golden.
  • Serve with extra pickles (or chutney) on the side.

  • green tomato pickles (or any other chutney)
