Moroccan flavoured slow cooked rump of beef with spiced carrot salad

Method

  • The day before, make the marinade by processing 2 chopped red onions with the garlic, parsley and about ?½ cup oil to form a paste.
  • Add the juice of 2 lemons, the spices, a good pinch of salt, a decent amount of ground pepper and 2 chopped bunches fresh coriander. Whiz up until well combined, adding a little more oil through the feeder tube if needed. Taste for seasoning.
  • Then put the beef in a large bowl, together with the marinade and toss well using your hands. Cover with plastic wrap and refrigerate for at least 24 hours, mixing every few hours.
  • When ready, preheat the oven to 140°C normal (120°C fan forced).
  • Cut the remaining red onions into chunks and put them in an oven tray, together with the brown sugar and seasonings. Cover with stock and toss well. Then top with the beef, smear with any excess paste and cook in the oven for about 3?½ hours, stirring the onions every now and then. Remove the beef, loosely cover with kitchen foil and set aside for about 15 mins, before slicing.
  • To make the carrot salad, blanch the carrots in boiling water until just tender. Drain and put in a bowl.
  • Then heat 4 tbsp oil in a pot and briefly cook the carrots with the honey, red wine vinegar, harissa, seasonings and 3 tbsp chopped coriander.
  • To serve, arrange the carrots and sliced beef on individual plates and top with the caramelised onions and some cooking juices.
  • nb. The carrot salad can be served hot or cold.

  • 2 tspn paprika
  • sea salt & freshly ground pepper
  • 2½ bunches fresh coriander
  • 4 kg rump of beef, trimmed of all fat & sinew
  • 3 tbsp brown sugar
  • 2-3 cups chicken stock
  • 18 baby carrots, peeled
  • a good slurp of honey
  • a good slurp of red wine vinegar
  • 1 tspn harissa (or another chilli paste)
