Spicy tomato sauce in the microwave

Method

  • Cook the pasta in lightly salted, boiling water until al dente. Drain well.
  • When the pasta is almost ready, put the tomatoes, onion, capsicum, garlic, soy, chilli paste, seasonings, parsley and 2 tbsp oil in a large bowl. Stir well, cover with plastic wrap and cook in the microwave on high for about 4 mins until soft. Then strain the sauce, puree and taste for seasoning.
  • Heat a little oil in a large heavy-bottomed pan and fry the bacon, continually stirring. Then add the tomato sauce with the pasta. Stir to coat well and briefly cook.
  • Serve the pasta in individual bowls with grated parmesan sprinkled on top.

  • 400 gm pasta
  • sea salt & freshly ground pepper
  • 4 large ripe, red tomatoes, cored & chopped
  • ½ onion, chopped
  • ½ red capsicum, seeded, cored & diced
  • 2 garlic cloves, crushed
  • 1 tspn soy sauce
  • 1 heaped tspn chilli paste
  • 1 heaped tbsp chopped fresh parsley
  • olive oil
  • 3 rindless bacon rashers, diced
  • freshly grated parmesan
