The pick me up roll

Method

  • Heat a little oil in a large heavy-bottomed pan and gently sauté the sausages all over, cut side down first, together with the onion and bacon.
  • At the same time, heat a little oil in another pan and fry the eggs, easy over (both sides cooked).
  • Slice the buns in half lengthways, almost all the way through, and generously smear the bottoms with pickles. Top with the fried onion and bacon, sausage, an egg and a good slurp of the spicy tomato sauce.
  • Serve with plenty of serviettes.

  • olive oil
  • 4 spicy sausages, eg. chorizo, sliced lengthways
  • 1 red onion, sliced
  • 2-3 streaky bacon rashers, sliced
  • 8 large eggs
  • sea salt & freshly ground pepper
  • green tomato pickles (or any other chutney)
  • 8 hot dog buns (or any soft buns)
  • Taka Tala sauce (or any other spicy tomato sauce)
