Chinese BBQ spare ribs

Method

  • Put the spare ribs in a large pot of water and bring to the boil. Turn the heat down and gently simmer for 20 mins. Then drain well and set aside to cool.
  • Mix together the garlic, chillies, ginger, hoisin, sugar, honey, tomato sauce, soy and rice wine in a large bowl.
  • Add the spare ribs to the marinade. Toss well, using your hands, and refrigerate for at least 3 hours (overnight would be even better).
  • When ready, preheat oven to 180°C fan forced (200°C normal).
  • Transfer the ribs to an oven tray, spread them out in one layer and cook in the oven for about 45 mins until they turn dark brown, turning once.
  • Serve with steamed rice on the side and plenty of serviettes.

  • 1½ kg spare ribs, individually cut lengthways & then in 3 crossways
  • 4 garlic cloves, finely chopped
  • 2 small red chillies, finely chopped
  • 3 x 5 cm pieces fresh ginger, finely chopped
  • 125 ml hoisin sauce
  • 1 tbsp brown sugar
  • 1 tbsp honey
  • 2 tbsp tomato sauce
  • 3 tbsp soy sauce
  • 3 tbsp Chinese rice wine
