Potatoes baked in a bag with fresh herb & lemon butter

Method

  • Preheat oven to 180°C fan forced (200°C normal).
  • Combine the butter, garlic, chopped herbs and lemon juice using a wooden spoon.
  • Then put a sheet of baking paper on a workbench, place 4 potatoes in the centre and sprinkle with a decent amount of salt.
  • Place a knob of the butter on top of each potato, wrap the baking paper into a parcel, turn over and put on a baking sheet.
  • Cook the potatoes in the oven for about 30 mins (checking if ready by piercing with a small sharp knife).
  • Serve the potatoes in the packet as an accompaniment with your favourite meat or fish dish.
  • nb. Roll up any extra butter in kitchen foil, squeeze the ends and freeze until needed.

  • 250 gm butter, softened
  • 1 large garlic clove, crushed
  • 2 heaped tbsp mixture of chopped fresh herbs, eg. parsley, tarragon, basil
  • juice of 1 lemon
  • 16 small chats (baby potatoes), scrubbed well
  • sea salt
