Salmon with Bobby Flay's black bean mango salsa


  • Spray the salmon with a little oil, season and cook on a preheated ridged grill (or BBQ).
  • Put the red onion, chilli, black beans, mango, coriander, olive oil, lime juice, seasonings and a little honey in a bowl. Gently toss and taste for seasoning.
  • To serve, mound the salsa on individual plates and top with the salmon.


  • 4 x 180 gm salmon steaks

  • sea salt & freshly ground pepper
  • ½ small red onion, finely diced
  • 1 small red chilli, seeded & finely sliced
  • 1 cup canned black beans (turtle beans), rinsed & drained
  • 1 large mango, peeled, pitted & finely diced
  • 4 tbsp chopped fresh coriander
  • 4 tbsp olive oil
  • about 4 tbsp fresh lime juice
  • 1-2 tbsp honey (optional)
