Moussaka of market fish

Method

  • Heat a little oil in a heavy-bottomed pan and gently sauté the onion with 1 crushed garlic clove until softish.
  • Add the tomato paste and briefly cook, continually stirring.
  • Then add the red wine with 1 tbsp chopped basil, the parsley, seasonings and canned tomatoes. Stir well and gently cook until thick and fragrant. Taste for seasoning.
  • To make the salsa, combine the fresh tomatoes with the red onion, lime juice, a slurp of oil, 3-4 chopped Thai basil leaves, salt and pepper. Taste for seasoning.
  • In a large bowl, combine the chillies with the remaining garlic, the leaves from 3 Thai basil sprigs, star anise and 200 ml oil. Toss in the scampi and set aside for a few minutes to marinate.
  • Spray the eggplant with oil and grill until cooked and firm, adding the scampi and seasoned fish once turned over.
  • When the fish is almost ready, cook the haloumi on the lightly oiled ridged grill, being careful not to burn.
  • To serve, place a slice of eggplant on individual plates and layer with the fish, a spoonful of the tomato sauce, the haloumi, another piece of eggplant and fish, and a spoonful of the sauce. Finish with another piece of haloumi and the scampi, and spoon the salsa around the plates.

  • ½ cup red wine
  • a few sprigs Thai basil
  • 1 tbsp chopped fresh parsley

  • 2 cans diced tomatoes
  • 2 ripe red tomatoes, seeded, cored & finely diced
  • 1 red onion, finely diced
  • juice of 1 lime
  • 2 small red chillies, seeded & chopped
  • 2 star anise
  • 2 scampi
  • 4 thick slices eggplant
  • olive oil spray
  • 4 x 50 gm thin slices of fish fillet
  • 4 slices haloumi cheese
