Pasta with anchovies, chillies & broccoli


  • Cook the pasta in a large pot of lightly salted boiling water, adding the broccoli for the last few minutes.
  • To make the dressing, heat the oil in a heavy-bottomed pan and gently sauté the chillies, garlic and anchovies with ground pepper, tossing as you do so.
  • Drain the pasta and broccoli, and return to the pot. Then toss with a little of the cooking water, a decent amount of parmesan and the perfumed oil.
  • Serve the pasta with some more parmesan sprinkled on top.


  • 400 gm penne
  • sea salt & freshly ground pepper
  • 1 small head of broccoli, cut into small florets
  • about ¼ cup olive oil
  • 2 small red chillies, seeded & chopped
  • 2 garlic cloves, chopped
  • 6-8 anchovies, chopped
  • freshly grated parmesan
