English breakfast skewers
Method
- Blanch the sausages in a pot of simmering water until firm to the touch. Then drain well and cut into chunks.
- Put a tomato, mushroom and piece of sausage on a skewer. Then add another tomato, a mushroom, piece of folded-over bacon, another piece of sausage, a tomato and, if you like, another piece of sausage. Repeat the process with more skewers.
- Lightly spray the skewers with oil and cook them on a preheated ridged grill (or BBQ). Then remove the ingredients from the skewers and set aside.
- Cook the eggs easy-over (on both sides) on an oiled flat grill or in a non-stick pan and grill or toast the bread.
- To serve, place a piece of toast on individual plates and top with an egg, the grilled ingredients, a dollop of the sauce and a sprinkling of parsley.
Ingredients
- 3-4 thick sausages
- ½ punnet cherry tomatoes
- 12 small button mushrooms
- 4 streaky bacon rashers, halved lengthways
- olive oil spray
- 4 large eggs
- 4 slices country-style bread
- tomato or BBQ sauce
- 2 tbsp chopped fresh parsley
