The vineyard workers 'burgers'

Method

  • To make the sauce, heat a little oil in a heavy-bottomed pan and gently sauté 1 diced onion with 1 crushed garlic clove and the mushrooms until lightly coloured.
  • Add the tomato paste and briefly cook, continually stirring until well combined.
  • Then add the flour and cook until well combined.
  • Add the red wine and stock with 1 tbsp chopped parsley, the thyme and seasonings. Stir and cook down to form a sauce consistency, adding more liquid if needed. Taste for seasoning.
  • At the same time, cook the potatoes in lightly salted, boiling water until tender. Drain well and set aside, covered.
  • Heat a little fresh oil in another pan and gently sauté the remaining onion with 2 chopped garlic cloves and the diced bacon. Then transfer to a large bowl and add the chutney, worcestershire and seasonings. Mix well and add the egg if too dry.
  • Place 2 streaky bacon slices on a work bench to form a cross. Mound a quarter of the burger mixture in the centre and wrap up. Repeat the process and cook the burgers on both sides in a thin layer of hot oil. When ready, carefully remove the burgers and add them to the sauce. Turn the heat down and gently cook, basting now and again.
  • Then mash the potatoes with the hot milk, cream, 1 tbsp chopped parsley and the butter.
  • To serve, mound a good dollop of mash on individual plates and top with a burger, the sauce and a sprinkling of parsley.

  • 2 cups red wine
  • 2 cups chicken stock
  • 3-4 tbsp chopped fresh parsley
  • a few sprigs of fresh thyme
  • sea salt & freshly ground pepper
  • 6 medium potatoes, peeled & halved
  • 2 rindless bacon rashers, diced
  • 500 gm lean minced beef
  • 1 heaped tbsp tomato chutney
  • a splash of worcestershire sauce
  • 1 egg, if needed
  • 8 slices streaky bacon
  • ¼ cup hot milk
  • a good slurp of cream
  • a dollop of butter
