Zucchini slice


  • Preheat oven to 180°C fan forced (200°C normal).
  • Combine the onion, bacon, zucchini and cheese with a decent amount of seasonings, the eggs and vegie oil.
  • Then spoon the mixture into an oiled slice tin, evenly spreading to the corners, and cook in the oven for 30-40 mins until firm and lightly browned.
  • Serve with a good dollop of your favourite chutney and good crusty bread on the side.

  • 3 rindless bacon rashers, chopped
  • 375 gm zucchini, grated
  • 1½ cups grated tasty cheese
  • sea salt & freshly ground pepper
  • 5 eggs, lightly beaten
  • ½ cup vegetable oil
  • olive oil spray
