Chicken with 3 flavoured sauce


  • Heat a little oil in a heavy-bottomed pan and gently sauté the chillies, garlic and red onion until softish, stirring now and again.
  • Then add 1 cup water with the lime juice, fish sauce, sugar and salt. Stir well and briefly cook.
  • Heat a thin layer of oil in another pan and sauté the floured chicken thighs until well sealed. Then drain, add to the sauce and cook until ready, before stirring through the coriander.
  • Serve on a bed of steamed rice.

  • 8 long red chillies, chopped
  • 8 garlic cloves, chopped
  • ½ red onion, chopped
  • about 1½ cups water
  • 8 tbsp fresh lime juice
  • 6 tbsp Asian fish sauce
  • 6 tbsp shaved palm sugar (or soft brown sugar)
  • a good pinch of sea salt
  • 8-10 large chicken thighs, boned
  • rice flour
  • 2-3 tbsp chopped fresh coriander
