The gang's cupcakes

Method

  • Preheat oven to 180°C fan forced (200°C normal).
  • Cream 200 gm butter with the caster sugar until light and fluffy in a large bowl.
  • Add the flour and lemon zest. Mix with a wooden spoon and then add the eggs, one at a time, stirring well between each addition. (If the batter is too thick, mix in 1-2 tbsp water.)
  • Place 12 paper patty cases in a muffin tray, half fill with the batter and cook in the oven for about 10-14 mins until springy to the touch. Then cool on a rack.
  • Beat the icing sugar and remaining butter until smooth. Then add 1 tbsp cold water and mix well.
  • Divide the icing mixture into a few bowls and mix with various food colourings. Then spread the icing over the cupcakes and set aside briefly to set. When ready, decorate the cakes as you like and enjoy!

  • 325 gm unsalted butter, softened
  • 200 gm caster sugar
  • 200 gm self-raising flour, sieved
  • grated rind of 1 lemon
  • 4 large eggs, at room temperature
  • 250 gm icing sugar, sieved
  • any food colourings
  • any coloured decorations, eg. chocolate buttons, mini & large marshmallows, 100's & 1000's, etc.
  • small tubes of instant coloured icing
