Toffee apple pudding


  • Preheat oven to 160°C fan forced 180°C normal).
  • Mix the flour, caster sugar, baking powder and salt in a large bowl. Make a well in the centre and add the milk, egg and vanilla. Then whisk to form a smooth batter.
  • Brush a 2-litre ovenproof dish all over with melted butter. Then arrange the apples in the base, spoon the batter on top and smooth out.
  • Put the brown sugar and boiling water in a bowl and mix well until smooth. Then pour the toffee over the batter. Scatter the pecans on top and cook in the oven for about 40 mins.
  • Serve with a good scoop of ice cream or dollop of thickened cream on the side.

  • 3-4 Granny Smith apples, peeled, cored & sliced
  • 140 gm brown sugar
  • 250 ml boiling water
  • 50 gm pecans, roughly chopped
