Cinnamon buns


  • Preheat oven to 180°C fan forced (200°C normal).
  • Blend the cottage cheese and buttermilk with ¼ cup melted butter, the white sugar and 1 tspn vanilla in a food processor until smooth.
  • Then add 270 gm flour with the baking powder, salt and bicarb. Pulse in short bursts until the dough just clumps together (will be soft and moist). 
  • Scrape out the dough and knead the flour on a lightly floured workbench 4-5 times with floured hands until smooth. Then roll the dough into a rectangle shape (about 12" by 15") and brush with extra melted butter, leaving a border.
  • Combine the brown sugar, ground cloves, cinnamon and allspice. Then evenly sprinkle the spices over the dough and gently pat, using the back of a tablespoon.  Scatter pecans over the top and roll up, leaving the ends open.
  • Cut the dough into 12 even pieces and put in an oiled springform cake tin, packed tightly. Then cook in the oven for 30-40 mins until golden brown and firm to the touch.  When ready, allow to cool for 5 mins, before unmoulding by running a spatula around the edge. 
  • Combine the icing sugar with the cold milk and 1 tspn vanilla until dissolved. Then drizzle this over the buns and set aside to cool a little, before serving with your favourite hot beverage.

  • 2-3 tbsp cold plain milk
