Pork in plum sauce


  • Combine 1 tbsp soy with the sesame oil, Chinese wine and 1 crushed garlic clove in a large bowl.
  • Slice the pork, toss in the marinade and then refrigerate for about 30 mins, stirring now and again. 
  • When ready, transfer the pork and any marinade into another bowl. Cover with plastic wrap and cook in the microwave on high for 2-3 mins until the meat loses its pinkness, checking and stirring every minute. Set aside, covered.
  • Then, in a smaller bowl, whisk the plum jam with the sherry, stock, 2 tspn soy, the cornflour and remaining garlic. Cover with plastic wrap and cook in the microwave on high for 2 mins, until smooth and clear.
  • Drain the pork and then toss with the plum sauce. Taste for seasoning. 
  • Serve on a bed of steamed rice with your favourite steamed Asian green vegies on the side.
