A true blue rice pud


  • Preheat oven to 180°C fan forced (200°C normal).
  • Butter a gratin (or pudding) dish and add the rice, sugar and vanilla. Stir and then pour in the milk.
  • Cook the pudding in the oven for 1 hour, running a fork through the rice every now and again. 
  • Then lower the oven temp. to 160°C fan forced (180°C normal) and cook the pudding for another 45 mins.
  • Serve with a dollop of thick cream or ice cream on top.

  • 100 gm pudding (short grain) rice
  • 75 gm caster sugar
  • a good splash of vanilla essence
  • 1.2 litres full cream milk
