Onion smothered pork chops


  • Preheat oven to 160°C fan forced (180°C normal).
  • Put the pork chops in a large heavy-bottomed casserole (or any ovenproof) dish in one layer.
  • Scatter the red onion, thyme, fresh and dried sage, seasonings and the butter on top. Cover tightly and cook for 1½ hours, basting now and again.
  • Serve with steamed broccoli (or any other green vegies) on the side.


  • 4 x 200 gm pork chops
  • 2 large red onions, halved & sliced
  • 10 fresh thyme sprigs
  • 12 fresh sage leaves
  • 2 tspn dried sage
  • sea salt & freshly ground pepper
  • ¼-½ small block of butter, cubed
