Quick as a flash Japanese chicken & vegies


  • Soak the shiitakes in hot water for about 30 mins. Then drain well, remove and discard the stalks and slice. 
  • Put the cubed chicken with the sliced shiitakes, carrots, stock, soy, mirin and sugar in a large bowl. Toss well, cover with plastic wrap and cook in the microwave on high for 6-8 mins until the chicken is just cooked. 
  • Then add the snowpeas, stir well and cook in the microwave for another 30 secs. Taste for seasoning. 
  • Serve on a mound of steamed rice.


  • 4 dried shiitake mushrooms
  • 2 large boned, skinless chicken thigh fillets, cubed
  • 4-5 baby carrots, peeled & sliced
  • ¼ cup chicken stock
  • 3 tbsp soy sauce
  • 2 tbsp mirin (Japanese rice wine) or dry sherry
  • 1 tspn sugar
  • 8 snowpeas, halved
