Bannofis pudding


  • Put the unopened can of condensed milk in a pot of boiling water, adding more hot water to cover. Simmer for 3 hours, adding more hot water as needed to ensure the can is always under water. Then set the can aside to cool a little, before opening.
  • Toss the fruit with the liqueur. 
  • Put the cubed biscuits in another large bowl, sprinkle with a little liqueur and top with the fruit. Then layer with the caramel (cooked condensed milk) and top with a good dollop of the cream and a sprinkling of chocolate.


  • 1 x 395 gm can of condensed milk, unopened
  • a mixture of fresh fruit, peeled if necessary & cut into chunks 
  • orange liqueur (optional)
  • sponge biscuits, cut into cubes
  • lightly whipped cream
  • freshly grated good dark cooking chocolate
