Strange flavoured chicken


  • Poach the sausages in simmering water for 5 mins. Then drain well, shred and set aside. 
  • Put the sugar, black vinegar, soy, sesame paste, sesame and chilli oils, the sauce from the chicken, peppercorns and peanut oil in a processor and combine, adding a little hot water if too thick. 
  • Then toss the chicken, sausage, snowpeas, spring onions and bean shoots with the dressing to taste.
  • Transfer the mixture to a large bowl (or individual bowls) and serve with a sprinkling more of the dressing on top.


  • 2 bought Chinese sausages
  • 2 tbsp shaved palm (or soft brown) sugar
  • 2 tbsp Chinese black vinegar
  • 2 tbsp soy sauce
  • 80 ml Chinese sesame paste
  • 1½ tbsp sesame oil
  • a few drops of chilli oil
  • ½ bought Chinese soy sauce chicken, shredded, with the sauce 
  • 2 tbsp freshly ground Sichuan peppercorns (or normal peppercorns)
  • 30 ml peanut oil
  • 6-8 snowpeas, finely shredded
  • 2-3 spring (green) onions, finely shredded
  • a small handful of bean shoots
