Steak with Latin American flavours


  • Heat a little oil in a heavy-bottomed pot and briefly sauté the garlic and chillies, continually stirring.
  • Transfer the mixture to a large bowl and add about ½ cup oil, the spring onions, 2-3 tbsp chopped oregano, seasonings and lime juice. Combine well, taste for seasoning and set aside.
  • Spray and season the steaks, and cook on a preheated ridged grill (or BBQ) to the desired degree. Remove and set aside to rest, before cutting into thick slices.
  • Then cook the onion and pineapple on the grill until slightly charred. Chop the pineapple into chunks and add to the dressing together with the onions and steak. Toss until well combined.
  • Serve on individual plates and sprinkle with a little more chopped oregano.

  • 4-6 slices fresh pineapple
