Easy fruit bread


  • Preheat oven to 180°C fan forced (200°C normal).
  • Put all the ingredients in a large bowl and beat with a hand mixer until well combined. 
  • Then spray a loaf tin with oil (or brush with extra melted butter), pour the mixture in and cook in the oven for about 45-60 mins. 
  • When ready, turn the bread out onto a cake tin to cool, before slicing and serving with good butter or even your favourite soft cheese on the side.

  • 4 cups self-raising flour
  • 1 tspn ground nutmeg
  • 60 gm unsalted butter, softened
  • 1 cup brown sugar
  • 1½ cups sultanas or raisins
  • 1&2/3 cups currants
  • 1/3 cup mixed peel
  • 1½ cups milk
  • 1 cup golden syrup 
  • 1 large egg
  • cooking oil spray
