Quick 'n' tasty fish fillets


  • Combine the lime juice, soy and ginger with a good slurp of vegetable oil in a large bowl.
  • Add the fish, gently toss and set aside for about 15 mins, tossing now and again. 
  • When ready, heat a heavy-bottomed pan and gently cook the fish with the marinade, reducing the liquid as you do so, adding a little water if needed and sprinkling with 1-2 tbsp chopped coriander for the last few minutes. 
  • Heat a little oil in a wok (or non-stick pan) and stir fry the snowpeas to crisp-tender. 
  • Serve the fish on a bed of snowpeas with the sauce poured over the top and a sprinkling of coriander.
