Pork Sloppy Joes

Method

  • Put the tomatoes, ketchup, stock, mustard, soy, parsley, sugar, cumin and chilli powder in a heavy-bottomed pan. Stir and gently cook until thick and fragrant. 
  • Add the pork, stir well and briefly cook to heat through. 
  • When the sauce is almost ready, heat the bread rolls in a preheated oven.
  • Then slice the rolls in half and top with the lettuce, a decent amount of the pork mixture and a good spoon of sour cream. Press down the top.
  • Slice in half and serve with plenty of serviettes on the side.

Ingredients

  • 1 can diced tomatoes, drained a little 
  • ½ cup tomato ketchup
  • ¼ cup chicken stock
  • 1 heaped tspn Dijon mustard
  • a good splash of soy sauce
  • 1 heaped tbsp chopped fresh parsley
  • 1 tspn brown sugar
  • 1 tspn ground cumin
  • 1 tspn chilli powder (or chilli paste)
  • 1 container bought Chinese BBQ pork (or any other cooked meat, if you prefer), shredded
  • 4 large bread rolls
  • inner leaves of 1 iceberg lettuce
  • sour cream
