Beef & black bean chilli


  • Heat a thin layer of oil in a large heavy-bottomed pot and brown the cubed beef all over, seasoning once sealed. Remove. 
  • Add a little fresh oil to the pot, if needed, and gently sauté the onion and garlic until tender. 
  • Then add the chilli paste, paprika, cumin and ground coriander. Stir well and cook to toast the spices. 
  • Add the beef mince and cook to seal, mashing with a wooden spoon as you do so. Then add the tomatoes with the red wine, ½ cup each of chicken and beef stock, and seasonings. Stir well and bring to the boil. 
  • Return the cubed beef to the pot with any juices. Stir well and rapidly simmer for about 45 mins until tender and the sauce is thick, adding equal quantities of the stock if needed and mashing with a wooden spoon as it cooks.
  • Then add the turtle beans and chopped coriander. Stir and gently cook for about 10 mins. 
  • Place the spring onions, grated cheese and sour cream in individual small bowls. Then heat the tortillas and serve with the chilli and condiments on the side.
  • nb. If you prefer, the chilli can be put into individual bowls and topped with a dollop of sour cream, spring onions and grated cheese. Then serve with the tortillas on the side.

  • 2 tbsp chopped fresh coriander chopped
  • spring (green) onions
  • grated tasty cheese
  • sour cream tortillas
