French fruit toast ice cream sandwiches


  • Beat together the eggs, vanilla and cinnamon in a large bowl. 
  • Then generously dip the slices of bread into the egg mixture and cook on a lightly oiled grill for about 45 secs on each side. Set aside to cool. 
  • When the bread has cooled, place a scoop of ice cream on a piece of bread and spread it out. Then top with another piece of bread, press down and tightly wrap in plastic wrap. Repeat the process and freeze for 1-2 hours. 
  • When ready, unwrap the sandwiches and serve them as is for a snack or as a dessert.
  • nb. The French toast can be pan fried in a little oil with a knob of butter, if you prefer.

  • 1 loaf fruit bread, cut into thick slices
  • cooking oil spray
  • any flavour ice cream, softened
