Flat bread with roasted pumpkin, green olives & feta

Method

  • Preheat the oven to 220°C fan forced (240°C normal).
  • Place the pumpkin in an oven tray. Season, lightly oil and cook in the oven until tender.
  • At the same time, heat a little oil in a heavy-bottomed pan and gently sauté the red onion until tender, continually stirring. Remove and set aside with the roasted pumpkin to cool. 
  • Combine the yeast with the sugar, lukewarm water and 1 cup strong bread flour in a large bowl using a wooden spoon. Set aside to rest until the dough begins to bubble. 
  • Add up to 1½ cups more flour and 1 tspn salt. Using your hands, mix until the dough is not sticky. Then knead on a lightly floured workbench until the dough is smooth and elastic, adding more flour if needed.
  • Put the dough in a lightly oiled bowl, cover with plastic wrap and set aside in a warm place for up to an hour until doubled in size.
  • When ready, punch down the dough (to deflate the yeast gases and allow the fermentation to begin again). Then return the dough to the bowl, spray with a little more oil if needed, cover with plastic again and set aside in a warm place to double in size. (This stage can be done the day before and left in a sealed container in the fridge.)  
  • Roll out the dough on a lightly floured workbench to the desired shape. Then lay it on 1-2 lightly oiled baking trays and top with the red onion, pumpkin, olives and feta.
  • Spray with oil and cook the bread in the middle of the oven for about 15-20 mins until risen and golden.

  • 250 gm piece of pumpkin (not butternut), finely sliced
  • sea salt & freshly ground pepper
  • olive oil
  • ½ large red onion, finely sliced
  • 1 tbsp dry yeast
  • a good pinch of sugar
  • 1 cup lukewarm water
  • 2½ cups strong bread flour
  • olive oil spray
  • 8 pitted green olives, halved lengthways
  • a good handful of crumbled feta
