Mushrooms 'burgers' with apple & celery slaw


  • Spray the mushrooms with oil, season and cook on a preheated ridged grill or BBQ until tender, spraying with more oil as you do so (or even in the oven). Cut in half if needed.
  • To make the slaw, toss the celery and apples with the lemon juice, mayonnaise, mustard, cider vinegar, salt and pepper until well combined. Taste for seasoning.
  • Toast or grill the bread, evenly lay the slaw on top of half the bread and top with the mushrooms. Then spread the relish on the remaining bread, place on top of the mushrooms, press down and enjoy!


  • 8 large field mushrooms, peeled & stalks removed
  • olive oil spray
  • sea salt & freshly ground pepper
  • 3 celery stalks, finely sliced
  • 2 Granny Smith apples, unpeeled & finely sliced
  • a good squeeze of lemon juice
  • 2 tbsp mayonnaise
  • 2 tspn grain mustard
  • a splash of cider vinegar
  • 8 thick slices of good bread or 4 burger buns
