Pasta Fritta


  • Heat half of the oil in a large non-stick pan and cook half of the parmesan over a low heat until it sizzles. 
  • Then top with the cooked pasta and press down to make an even layer. Cover with a lid and gently cook until golden brown on the bottom. 
  • When ready, remove the pasta and repeat the process with the remaining oil and parmesan. 
  • Then place the pasta 'cake' on top, cooked side up, and cook as above.
  • Serve with a simple salad on the side.


  • ¼ cup olive oil
  • 1½ cups freshly grated parmesan
  • 400 gm any leftover cooked pasta
