Stuffed cabbage leaves in the microwave

Method

  • Place the cabbage leaves on a large plate, cover with kitchen plastic wrap and cook in the microwave on high for 1-2 mins to soften a little.
  • Mix together the pork, spring onions, garlic and ginger with 1 tbsp soy and seasonings until well combined.
  • Then carefully remove the stalk from the cabbage leaves, mound some pork mixture in the centre of each one and roll up like an envelope.
  • Place the parcels in a gratin dish (or any large ovenproof dish), seam side down. Pour ¼-½ cup stock over the cabbage parcels, sprinkle with a little more soy, season and cover with more plastic wrap.
  • Then pierce 2 holes in the plastic and cook in the microwave on high for about 7-8 mins until the pork is cooked.
  • Serve the parcels with the juices spooned over the top and a garnish of coriander.

  • 2 spring (green) onions, finely chopped
  • 1 garlic clove, crushed
  • 1 tbsp grated fresh ginger
  • soy sauce
  • sea salt & freshly ground pepper
  • 1 cup chicken stock
  • 2 tbsp fresh coriander leaves
