Sweetcorn, feta & coriander fritters


  • Blanch the sweetcorn in boiling water. Then drain and set aside.
  • Whisk the flour, baking powder, egg and milk until well combined in a large bowl. 
  • Then add the feta, corn, spring onions, seasonings and coriander. Mix until well combined. 
  • Heat a thin layer of oil in a heavy-bottomed pan and fry large tablespoons of the mixture in batches. Drain on kitchen paper towels. 
  • Gently toss the lettuce leaves, avocado, balsamic and seasonings with enough fresh oil to coat well. 
  • Serve the fritters with a mound of the salad on the side.


  • 200 gm frozen sweetcorn
  • 100 gm plain flour

  • 1 large egg 
  • 150 ml milk
  • 100 gm feta, cubed
  • 2 spring (green) onions, chopped
  • sea salt & freshly ground pepper
  • 2 tbsp chopped fresh coriander
  • olive oil
  • inner leaves of 1 cos lettuce
  • 1 avocado, sliced
  • a splash of balsamic vinegar
