Chapatis with raita & dahl Makhani


  • Mix together 250 gm flour and 2 good pinches of salt in a large bowl. Then make a well in the centre, add 175 ml cold water and knead with the palm of your hand for 8-10 mins until smooth, yet moist. Cover with plastic wrap and set aside in a warmish spot for 30 mins. 
  • To make the dahl, rinse the lentils under cold running water until clear. Then simmer in 3 litres boiling water until just tender and drain well.
  • Heat the ghee in a heavy-bottomed pan and gently sauté the cumin seeds and onion until just coloured. 
  • Add the turmeric and chilli powder. Gently cook to toast the spices, continually stirring. 
  • Then add the tomato puree, lentils, half the cherry tomatoes and seasonings. Turn down the heat and gently cook for about 10 mins, stirring now and again and adding a little water if starting to stick. 
  • Add the cream, coriander and a squeeze of lemon juice. Stir and cook for another couple of minutes. Taste for seasoning and transfer to a small bowl. 
  • To make the raita, gently toss the remaining tomatoes with the yoghurt, cucumber, mint and a good squeeze of lemon juice. Spoon into another small bowl and set aside. 
  • Roll small pieces of the dough on a floured workbench to rounds until about 10 cm in diameter. Put on an unoiled flat grill over a medium heat, turn over when slight bubbles appear and cook the other side. Then briefly put on a naked flame until they puff up.

  • 1 tbsp chopped fresh coriander
  • 1 lemon
  • 1 cup plain yoghurt
  • ½ continental (telegraph) cucumber, finely diced
  • 1 tbsp chopped fresh mint
