BBQ beef steak with turmeric dill, cauliflower & green beans

Method

  • Heat the oil in a heavy-bottomed pot and gently cook the dill seeds and turmeric for 1 min, covered. 
  • Add the cauliflower and toss until well coated. 
  • Then add the lemon zest and water. Cover, turn the heat down and simmer for 15 mins. 
  • Add the beans and cook until crisp-tender, before stirring through the dill.
  • At the same time, spray the steaks with oil and cook on a preheated ridged grill or BBQ to the desired degree, seasoning once sealed. 
  • Serve the steaks on individual plates with the vegies and a dollop of mustard or chutney on the side.

Ingredients

  • 2 tbsp olive oil
  • 1 tspn dill seeds
  • 1 tspn turmeric 
  • 1 very small cauliflower, cut into florets
  • 2 tbsp finely grated lemon rind
  • 1 cup cold water
  • 250 gm green beans, trimmed & cut into 3 cm lengths
  • 1 tbsp roughly chopped fresh dill
  • olive oil spray
  • 4 x 200 gm sirloin steaks, trimmed
  • sea salt & freshly ground pepper
