Welsh rarebit muffins


  • Preheat oven to 180°C fan forced (200°C normal).
  • Mix together the flours, bicarb, baking powder, salt and mustard powder using a wooden spoon. 
  • In another bowl, combine both cheeses, the yoghurt, milk, egg, Worcestershire and oil. 
  • Then combine both mixtures, being careful not to over mix. 
  • Place patty cases into a muffin tray and spoon in the mixture. Then cook in the oven for about 20-25 mins until golden.
  • When ready, cool the muffins a little on a rack, before serving warm with good butter.

  • 125 ml milk
  • 1 large egg
  • 1 tbsp Worcestershire sauce
  • 6 tbsp vegetable oil
