Rock cakes


  • Preheat oven to 180°C fan forced (200°C normal).
  • Sift the flour into a large bowl and rub with the butter until the mixture resembles breadcrumbs. 
  • Then add the sugar, dried fruit and ground ginger. Mix well. 
  • Whisk the egg with the milk in another bowl. Then add to the flour mixture and mix to form a stiff dough, adding a little more milk if too dry. 
  • Drop rough heaps (about 3 tbsp) onto 2 lightly oiled oven trays, leaving room between each one, and cook in the oven for about 10-12 mins until golden. 
  • Allow to cool on a rack, before serving and store any leftovers in an airtight container.
