Roast beef with Yorkshire puds, field mushrooms & parsley butter


  • Preheat oven to 230°C fan forced (250°C normal).
  • To make the parsley butter, combine the butter and parsley with the lemon juice, garlic and 1 heaped tbsp mustard. Then roll in kitchen foil and freeze until needed. 
  • When ready, place the mushrooms around the edge of a large oven tray, skin side down, generously brush with ghee and season.
  • Then place the beef in the centre, fat side down. Season and smear generously with mustard. Cook in the oven to the desired degree (about 20-25 mins for medium-rare). Remove and rest, before slicing. 
  • At the same time, to make the Yorkshire puddings, generously brush a 12-hole muffin tray with melted ghee. Drip in a little more ghee and cook in the lower shelf of the oven for 10 mins. Carefully remove the tray from the oven.  
  • Then sift the flour into a bowl. Make a well in the centre, break the eggs in the middle and combine using a hand beater until fairly stiff. 
  • Mix together the milk and water. Then gradually add to the flour mixture, beating between each addition. Scrape down the sides with a spatula, beat until smooth and transfer to a jug. 
  • Pour the dough into the hot muffin tray and cook in the lower shelf of the oven for 15-20 mins until risen and golden.
  • Arrange the mushrooms on individual plates and top with the sliced beef and 2 slices of the parsley butter. Then serve with 1 or 2 Yorkshire puddings on the side of the plate.
