Rump steaks with roasted onion salsa

  • Preheat oven to 180°C fan forced (200°C normal).
  • Toss the onions with some oil and seasonings in an oven tray and cook in the oven for about 30 mins until tender and well coloured. When cool enough to handle, remove the skins and roughly chop.
  • Then toss the onions with the chillies, sugar, coriander, 3 tbsp oil and the lime juice. Taste for seasoning and set aside for about 30 mins to develop flavour, if you like.
  • When ready, spray the steaks with oil and cook to the desired degree on a preheated ridged grill or BBQ, turning only a couple of times and seasoning once sealed.
  • Serve the steaks with a good dollop of the onion salsa on the side.

  • 6 onions, halved crossways, skin on

  • 2 large green chillies, seeded & chopped
