Pork fillets with honey & mustard sauce


  • Flour the pork, season and seal all over in a layer of hot oil in a large heavy-bottomed pan. Remove and set aside. 
  • Add a little fresh oil to the pan, if needed, and gently sauté the onion and garlic until softish. 
  • Then add the stock, lemon juice, honey, mustard and seasonings. Mix well, bring to the simmer and gently cook for about 5-10 mins to reduce a little. Taste for seasoning.
  • At the same time, blanch the beans in lightly salted boiling water until crisp-tender. Drain well. 
  • Return the pork to the pan with the parsley. Turn down the heat and briefly simmer to cook. 
  • Serve the pork on a bed of beans with plenty of the sauce spooned over the top.


  • 2 pork fillets, trimmed well & cut into even chunks
  • plain flour

  • ½ large onion, chopped
  • 1 garlic clove, crushed
  • 1 cup chicken stock
  • juice of 1 lemon
  • 2 tbsp honey
  • 1 heaped tspn grain mustard
  • 20 green beans, shredded
  • 1 tbsp chopped fresh parsley
