Prosciutto & avocado toast


  • Fry the prosciutto in a lightly oiled pan until crisp. Drain well on kitchen paper towels.
  • Combine the mayonnaise, sour cream, mustard, lemon juice and anchovies until well combined, with a little hot water if too thick. 
  • Toast the bread and then top with the mayo, cos leaves, prosciutto, avocado, a sprinkling more of the mayo and the chives.

  • 4-8 slices prosciutto
  • ½ cup mayonnaise
  • 1 heaped tbsp sour cream or crème fraiche
  • 1 tspn Dijon mustard
  • a good squeeze of fresh lemon juice
  • 2-3 anchovies, chopped
  • 4 thick slices sourdough
  • baby cos leaves
  • 1-2 avocadoes, sliced
  • 2 tbsp snipped chives
