Chicken Pastitsio


  • To make the mornay sauce, melt the butter in a heavy-bottomed pot and add the flour. Mix well and cook over a very low heat for 4-5 mins.
  • Add the milk all at once and whisk well. Then cook over a moderate heat for 10 mins, until reasonably thick, adding more milk as necessary. 
  • Add the tasty cheese and a little salt to taste with a little cream. 
  • Then heat a little oil in another heavy-bottomed pot and gently sauté the garlic, celery, carrot and onion until softish. 
  • Add the chicken mince and gently cook until it changes colour, stirring and mashing with a wooden spoon as you do so. 
  • Then add the sambel and 3 cans tomatoes with about 1 cup stock, seasonings and the soy. Stir well, turn the heat down and gently cook for about 30 mins until thick and fragrant, mashing now and again and adding more stock and tomatoes as needed. Taste for seasoning.
  • Preheat oven to 200°C fan forced (220°C normal).
  • Cook the macaroni in plenty of boiling water until al dente. Drain well and toss with a little oil. 
  • Then spoon a layer of the meat sauce into a large gratin dish and top with the macaroni, a little mornay sauce and some grated tasty and parmesan cheese. Top with more of the meat sauce and finish with a good layer of mornay and both cheeses. Cook in the oven for about 10-15 mins until golden and bubbling.
  • Serve with a simple green salad on the side.

  • 750 gm chicken mince
  • 1 tspn sambel oelek (or any chilli paste)
  • 3-4 cans diced tomatoes
  • 1½+ cups chicken stock
  • a good splash of soy sauce
  • 400 gm macaroni (or another tube pasta)
  • grated parmesan
