Ham, cheese & spring onion pastries


  • Preheat oven to 180°-190°C fan forced (200°-210°C normal).
  • Combine the ham, spring onions and gruyere with an egg and the ground pepper. 
  • In another bowl, beat the remaining egg with the milk. 
  • Cut the pastry sheets into 4. Then brush around the edges with the eggwash. 
  • Spoon the mixture on half of each pastry square, fold over and crimp the edges with a fork. Brush all over with eggwash and cook in the oven for about 10 mins until golden brown.


  • 100 gm leg of ham, chopped
  • 2-3 spring (green) onions, finely chopped
  • 100 gm gruyere cheese, grated
  • 2 eggs
  • freshly ground pepper
  • ½ cup milk
  • 2-3 frozen puff pastry sheets
