A pie in a spud

Method

  • Arrange the potatoes in a large round of double thickness good kitchen paper towels on a microwave tray. Then cook the potatoes in the microwave on high for about 12-15 mins until cooked through, turning once after 6 mins. Remove, cut potatoes in half lengthways and set aside to cool a little 
  • Preheat the oven to 220°C fan forced (240°C normal).
  • Heat a thin layer of oil in a heavy-bottomed pot and gently saute the onion, carrot, celery, garlic and bacon until tender. 
  • Add the mince and livers. Cook until the colour changes, gently mashing with a wooden spoon as you do so. 
  • Then add the wine with 1 cup tomato puree, the stock, seasonings and chutney. Cook for about 20-30 mins until thick and fragrant, stirring now and again, adding more tomato puree if needed. Taste for seasoning. 
  • Scoop out the potato interior, leaving a decent edge, and then mash with the cream, butter and a pinch of salt. 
  • Place the potato 'shells' on an oven tray, skin side down. Fill with the mince and top with the mash and a generous amount of grated cheese. Then cook in the oven until the top is golden and bubbling. 
  • Serve with a simple green salad or your favourite steamed green vegies on the side.
  • nb. Livers are optional - if not using them, increase the mince to about 500 gm.

  • ½ large onion, chopped
  • ½ medium carrot, diced
  • ½ celery stalk, diced
  • 1 garlic clove, crushed
  • 1 rindless bacon rasher, diced (optional)
  • about 400 gm minced lamb or beef
  • 3-4 chicken livers, diced
  • ¼ cup dry white wine
  • 1-2 cups tomato puree
  • ¼ cup beef stock
  • sea salt & freshly ground pepper
  • 2 heaped tbsp tomato chutney
  • a slurp of cream a dollop of butter, softened
  • grated tasty cheese
