Tuna, corn & cheese 'quiche'


  • Whisk the eggs, cream, seasonings and spring onions in a large bowl.
  • Then add the tuna, cheese and corn. Mix until well combined.
  • Heat a little oil in a heavy-bottomed non-stick pan. Add the egg mixture, cover and gently cook for about 12-15 mins until just set and a crust has formed around the edge.
  • When ready, cut into wedges and serve with a simple green salad on the side.


  • 6 large eggs
  • a good splash of cream
  • sea salt & freshly ground pepper
  • 2 spring (green) onions, chopped
  • 1 can tuna, drained
  • 1 cup grated tasty cheese
  • 1 cup frozen corn, thawed
  • vegetable oil
