Passionfruit honey


  • Whisk the sugar and eggs in a microwave-proof bowl. 
  • Then add the butter and passionfruit juice. Briefly whisk and cook in the microwave on high for 6-8 mins, whisking after every minute until smooth and creamy.  Set aside to cool for a few minutes.
  • Then pour the mixture into a clean container. Cover and refrigerate for up to one month. 
  • Serve on your favourite dessert or cake.

  • ½ cup fresh passionfruit juice (strained pulp)
